Voici une recette aux goûts subtils qui nous a été offerte par Gwen (copyright S’cuiz) :
Pour 2 brochettes
Progression
Préparer une marinade rapide en mélangeant 2 c. à s. de cidre, 1 trait de vinaigre de cidre, 2 c. à c. de miel, 1 petite gousse d’ail écrasée et une pincée de piment d’Espelette ou 1 c. à c. de pâte de piment végétarien*. Faire mariner 6 fines escalopes de lapin pendant 20 à 30 mn. Blanchir très rapidement 6 morceaux d’ananas confit pour les assouplir. Égoutter les escalopes et les morceaux d’ananas. Enrouler les escalopes autour des morceaux d’ananas et les maintenir en les piquant sur une branche de romarin. Saler et faire dorer doucement à la poêle pendant 15 à 20 mn. Rectifier l’assaisonnement et déguster.
Variations
L’ananas confit provient de la Fabrique de douceurs, tout comme l’incomparable piment végétarien. Vous pouvez décliner cette recette en remplaçant l’ananas confit par du piment végétarien confit ou des bananes confites.
