L’équipe du magazine Prima Cuisine Gourmande a eu un coup de cœur pour le Pimandou, et a décidé de le mettre en avant en proposant une délicieuse recette de millefeuilles de mangue au Pimandou.
Préparation : 15 min.
Cuisson : 3 min.
Ingrédients pour 4 personnes :
• 2 mangues
• 2 fruits de la passion
• 6 feuilles de brik
• 125 g de mascarpone
• 60 g de beurre de baratte
• 1 cuillère à soupe de sucre glace
• 4 cuillère à soupe de cassonade
• 1 sachet de sucre vanillé
• 2 brins de coriandre

1. A l’aide d’un petit bol, tailler quatre disques dans chaque feuille de brik. Badigeonner les disques de beurre fondu, les superposer deux par deux, les faire dorer 4-5 min. au four à th. 6 (180°C).

2. Peler les mangues, les couper en dés. Les dorer 2 min. à la poêle dans le reste de beurre avec la cassonade, la coriandre ciselée et quatre Pimandou hachés. Battre le mascarpone avec le jus filtré des fruits de la passion et le sucre vanillé.

3. Monter les millefeuilles. Garnir un double-disque de brik de mascarpone, poser deux disques de brik, puis recouvrir de mascarpone et de mangues. Terminer par un double disque de brik.

4. Réaliser ainsi trois autres millefeuilles. Les poudrer de sucre glace et décorer éventuellement chacun d’un Pimandou et d’un brin de coriandre fraiche.

Accompagnement suggéré : Un gewurtzraminer, vin blanc alsacien aussi à l’aise sur la puissante mangue que sur la vanille et le mascarpone.

Conseil : Tailler les feuilles de brik avec un emporte-pièce dentelé pour donner belle allure aux millefeuilles.
