L’épicerie de Bruno se trouve au 30 rue Tiquetonne à Paris, dans le quartier Montorgueil. Bruno y partage son amour et sa connaissance des épices, et invente régulièrement des recettes pour ses fameux apéros. C’est ainsi qu’il a imaginé le cake au pimandou.
Marché : 160 g de farine, 2 gros œufs ou 3 petits, 1 sachet de levure chimique, 130 g de sucre glace
A l’épicerie de Bruno : 30 g de piments doux de La Fabrique de Douceurs confits localement au sucre de canne
La Recette :
Faire ramollir le beurre à l’intérieur à température ambiante et sortir les œufs du réfrigérateur.
Equeuter les piments doux , les couper en petits morceaux.
Travailler le beurre mou et le sucre dans un saladier, puis incorporer les œufs l’un après l’autre en fouettant brièvement. Verser la farine et la levure dans un autre saladier, ajouter les piments doux et remuer bien avec une spatule en bois. Mélanger les 2 préparations, laisser reposer 45 minutes au réfrigérateur. Préchauffer le four à 210 ° C (th. 7).
Verser la pâte dans un moule à cake beurré et fariné, ou dans un meuble soupe.
Enfourner et faire cuire 5 mn.
Réduire la température du four à 180 ° C (th. 6) et poursuivre la cuisson pendant 45 mn
Couvrir avec du papier d’aluminium dès que la surface est suffisamment colorée.
Vérifier la cuisson en piquant avec la pointe d’un couteau dans le cake : elle doit ressortir sèche. Laisser tiédir puis démouler et faire refroidir sur une grille.
